Butter Chicken using Leftover BBQ Chicken!! So quick and easy to make and it tastes delicious! Definitely try this recipe if you have some leftover chicken.
It somehow tastes better with the leftover BBQ chicken.

Here's the step-by-step recipe for butter chicken using leftover BBQ chicken.
In a large pot, add in the oil and butter.
Ruky TipOnce the butter has melted add in the ginger garlic paste and bay leaf
We love using big pots because it makes it so much easier to cook and makes it easier to incorporate the ingredients in well.
Stir well and then add the dhana jeeru, garam masala, cumin powder, salt, paprika and hot chilli. Stir all the spices in and let them cook for around 1-2 minutes. This will release a delicious aroma into your kitchen!! Then, add in the water and let it cook for a further 5 minutes
Once the masala has cooked, pour in the blended tomato.
Ruky TipStir the tomatoes in well and then cover the pot to let the tomatoes cook fully
We always use blended tomatoes because it's so much easier to prep and incorporates so much more easily!
After the tomatoes are cooked, add in 1 tbsp of butter and the leftover BBQ chicken. We just used our hands and ripped the chicken into chunks. The shredded chicken was approximately 2 cups for us. Stir the chicken in and add 1/4 cup of water. Let it cook for 1 minute
Then add 1 cup of double cream. This will add so much depth and richness to the butter chicken. Stir it well and then cover. Let it cook for 3 minutes
Finally, add in the kasuri methi. This is the MAIN spice in our butter chicken recipe so don't skip it. It gives the dish its distinct and delicious flavour!!
