Palak Bhaji is a quick and easy recipe to make, yet so delicious its sure to please everyone! Spinach Bhaji is a firm fave in our household, we like to have it with either khichri or roti! An added bonus of this recipe is that it contains heaps of iron to help improve your health.

    Here's the step by step recipe

    Step1

    In a large pot, pour in the oil and add in the chopped potatoes. They should be in approx 2 inch chunks. Fry the potatoes, they should look golden on the outside. Add in the whole cumin and fry for 30 seconds Ruky Tip- We always like using large pots because it makes incorporating all the ingredients so much easier and so much faster

    Step2

    Then add in the chopped onions and fry them for 2 minutes. Add in the ginger garlic paste and cook for 3 minutes.

    Now add in the chopped chicken, stir then add the spices; turmeric powder, dhana jeeru, chilli powder, salt. Stir well. We use silicon spatulas as they make incorporating the ingredients so much easier

    Step4

    Then add in the peas and give it a stir. Pour in a splash of water- 2-3 tbsp. Then add in the tomatoes. We used tinned tomatoes but you can choose to use fresh tomatoes if you wish. Let the tomato cook for 5 minutes.

    Step5

    Finally, add in the spinach and cover with the lid, leave it for 2 minutes. Don't mix the spinach in at first, let it sit with the lid on then uncover and stir well. Then cover the lid again and allow to cook for 5 more minutes.
