Zarda - Indian Sweet Rice
Directions
Begin by washing and then par boiling 3 cups of rice with some orange food colour till al-dente (with a little bite left to it). Drain once done.
Heat 1 cup ghee in a pot. Fry 1/2 cup of mixed nuts and raisins for 2 minutes. Remove from ghee and set aside.
In the same ghee, fry 1/4 cup of coconut for 2 minutes - then set aside.
Now add the spices (cinnamon stick, cloves and cardamom) to the ghee. Stir for 30 seconds-1 minute.
Add cups of sugar and 1 cup of double cream. Stir until the sugar has dissolved.
Add the boiled rice to the pot. Mix everything together.
Add half of the nuts, dried fruits and pineapple. Leave the rest for garnishing at the end (optional). Cover the lid and cook the zarda on a low heat for 10 minutes.
Garnish the zarda with the remaining ingredients before serving hot.
