Here's the step by step recipe for Ruky's Loaded Chips
Firstly, fry your chips and set them aside. The measurements we've provided are rough, you can add as much or as little of each ingredient depending on your taste buds
Then, you'll need to marinate the chicken. In the chicken, add the paprika, hot chilli, vinegar, tandoori powder, salt, lemon juice and butter. Stir well to evenly incorporate all the ingredients
Then, in a wide pan add in the oil and then add in the marinated chicken. Stir well and cover for 5-7 minutes. Then add the water and cover again. Once the chicken has cooked, make a bowl with some foil and place it in the centre of the pan as shown in the video. Place the heated charcoal on top along with a dash of oil. Cover and leave for around 45 seconds. This will give the chicken a delicious 'on the fire' kind of taste but it is optional!
Using a temperature probe, test if the chicken has reached 75C and if it has, take it off the heat and set aside.
In a medium sized oven proof dish, start layering. Begin with the chips, a sprinkle of hot chilli powder, and a sauce mixture of your choice. Then add a sprinkle of cheese, the cooked chicken, sweetcorn, sauce of your choice and some more cheese. Finally, top with a sprinkle of parsley
Finally, put in the oven at 180 degrees C for around 10-15 minutes. You can leave it in longer if you like the crispier texture
Conclusion
Enjoy!
