Here's the quick and easy step by step recipe!
Firstly, trim off the sides of the loaf of bread (optional) and then soak them in water. Squeeze out all the water and set aside. Ruky Tip: You can use a potato ricer if you have one as it makes it easier to squeeze out the water
Once all the bread is ready, in a food processor, add in half of the chicken pieces, 1 handful of coriander and half of the soaked bread. Blend it all so it all comes together, you can add a splash of oil to help it blend together easily
Remove it from the food processor and repeat the steps above but this time also include crushed green chilli, garlic and salt. Give it a blend and like the previous batch you may also add a splash of oil
Transfer the mixture to a large mixing bowl and add in the black pepper, whole cumin and the cumin powder. Give it all a good mix using your hands to combine all the ingredients well. You could use a spoon
Then oil your tray, we used a 25 by 30cm tray approx, and flatten the mixture into the tray. We made ours around 0.8cm thick but you can make it whatever thickness you prefer
Place in in your preheated oven at 180 degrees and leave it to bake for 15 minutes approximately. When it is ready, it'll be slightly golden at the top
Once it's out the oven, cut it into squares of your preferred size and fry right away or just pop them in the freezer
