This Surti Sweet Shola is most commonly made on celebrations such as Eid, Weddings, Graduation Parties etc.
Shola is a sweet sticky Indian sweet dish made with the finest nuts and some sweet yellow rice that you just can’t have enough of. It most definitely makes an appearance on our food platters on Eid!

In a medium sized pot, boil the rice along with the turmeric/haldi. Once the rice has started coming to the top, add in the yogurt. This will make the yellow more vibrant! Drain the rice and set aside
In a medium sized pot, add the ghee, cloves, cardamom and cinnamon sticks on a medium heat. Leave for 2 minutes
Then add in the rice, sugar, double cream and pineapple. Stir well to combine all the ingredients. Let it cook for 5 minutes
Add in the dried fruits and nuts, you can use any that you have at hand, we've listed the ones we always use!
In a mini bowl, combine 2 tbsp of milk with a pinch of saffron and add it into the pot.
Leave it to cook for another five minutes.
Finally, add in the lemon juice and pineapple essence (optional). Stir and cook for 5-10 minutes on a low heat.
